Ajvar Recipe Prepared With EVOO

Ingredients
2 large eggplants
4-6 red bell peppers or red kapia peppers
1 onion
2 cups tomatoes
4-6 garlic cloves
salt&pepper
Directions
Cut eggplants in half vertically and place on a baking tray with red peppers.
Make sure you cross the white part of eggplants with a knife so it bakes faster.
Drizzle EVOO on eggplants and peppers then bake at 400F for 25 minutes.
In a skillet pan, sauté onion and garlic in decent amount of extra virgin olive oil. Then add chopped tomatoes and simmer until tomatoes are cooked.
When baking is completed, use a spoon to scoop the inside of eggplant to separate from eggplant skin.
Remove the seeds from peppers
Add eggplant and peppers in the tomato-onion-garlic sauce
Use a hand blender to mix until creamy
Simmer on low heat for 5 minutes to thicken
Serve with meat, on pasta or as slathered on fresh bread.
