Beets are an often under-appreciated vegetable that are a rich source of fiber and antioxidants, but also absolutely delicious when simply cooked with evoo and a pinch of salt. Roasting brings out their beautiful sweet-caramelized flavor and bright color. We love serving them on garlic yogurt with chopped fresh summer basil and of course drizzled with EVOO.
Ingredients
1 large beet, peeled and sliced
2 cups yoghurt
1/2 cup fresh basil, chopped
3-4 cloves of garlic, minced

Extra virgin olive oil (EVOO)

Directions
Preheat your oven to 400°F.
Place the beet slices on a baking sheet and drizzle with olive oil and salt. Roast for 25-30 minutes until tender.
In a bowl, mix yoghurt with minced garlic, salt, chopped basil and some EVOO to create a creamy garlic yoghurt bed.
Spread the garlic yoghurt on a serving plate and arrange the roasted beet slices on top.
Garnish with fresh basil leaves
Drizzle with a generous amount of very good EVOO for an extra burst of flavor.
